Tropical Rice Pudding

Ingredients

  • 1 cup cooked Sushi Rice
  • 1 cup light coconut milk
  • 1 cup pineapple juice
  • 1/2 cup sugar
  • 1/4 cup raisins
  • 2 tablespoons coconut rum, or 2 teaspoons vanilla
  • nutmeg

Preparation

  • Prepare rice according to package directions.
  • Combine cooked rice and remaining ingredients in a saucepan. Cook for 15 to 20 minutes over low heat stirring often.
  • Remove from heat and chill for at least 1 hour before serving.
  • Sprinkle lightly with nutmeg before serving (optional).
