Southwest Chicken & Rice Casserole

Ingredients

  • 3 cups cooked Texmati® Brown Rice
  • 2 cups cooked chicken breast, cubed
  • 2 medium zucchini, sliced
  • 3/4 cup Monterrey Jack cheese, shredded
  • 1 (4 oz) chopped green chillies, drained
  • 1 to 2 Jalapeno peppers, seeded and diced (optional)
  • 2 medium tomatoes, sliced
  • Topping Ingredients
  • 1 cup sour cream
  • 1/3 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • Pepper, to taste
  • 3/4 cup Monterrey Jack cheese, shredded

Preparation

  • Spread rice in the bottom of a greased 3 quart casserole dish or 9x13x2 inch baking pan.
  • Top with remaining ingredients; layering in order listed.
  • Mix topping ingredients together except for the cheese.
  • Spread over casserole; sprinkle with cheese. Bake in preheated 350 degree F. oven for 30 minutes.
