Rice Tabbouleh

Ingredients

  • 1 cup, uncooked Texmati® Brown Rice
  • 1 cup Italian flat-leaf parsley, chopped
  • 3/4 cup cucumber, chopped
  • 3/4 cup tomato, chopped
  • 1/4 cup mint leaves, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon ground black pepper

Preparation

  • Prepare rice according to package directions.
  • In a large bowl, combine rice, parsley, cucumber, tomato, mint, olive oil, lemon juice, salt and pepper. Toss well.
