Rice & Shine Muffins

Ingredients

  • 1 cup, cooked Jasmati® Rice
  • Nonstick cooking spray
  • 1/4 cup margarine
  • 1/2 cup honey
  • 2 eggs
  • 1 cup buttermilk
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Preparation

  • Preheat oven to 400 degree F. Coat a 12-cup muffin pan with non-stick cooking spray.
  • In a large mixing bow beat butter and honey until light. Add eggs; beat 3 minutes. Stir in buttermilk.
  • In a medium bowl combine rice, flour, baking powder, salt and baking soda. Add to liquid mixture and stir with a spoon until blended.
  • Fill prepared muffin cups 2/3 full. Bake 20 minutes or until done. Remove from pan at once.
