Rice Pudding

Ingredients

  • 2 cups cooked Sushi Rice
  • 2 1/2 cups milk
  • 1/2 cup sugar
  • 1/4 cup raisins
  • 1 teaspoon cinnamon
  • 1 (2 inch) strip of orange peel
  • 4 tablespoons sweetened coconut, grated

Preparation

  • Combine all ingredients, except coconut, in a saucepan. Cook for 35-40 minutes over low heat stirring often until mixture thickens.
  • Transfer to a serving bowl and chill for at least 1 hour before serving.
  • When ready to serve remove citrus peel. Sprinkle with coconut before serving.
