Rice & Cheese Spread

Ingredients

  • 1 cup cooked Texmati® White Rice
  • 1/2 pound Cheddar cheese, grated
  • 1 tablespoon onions, minced
  • 3 tablespoons green pepper, minced
  • 3 pimiento stuffed olives, chopped
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon pimiento, chopped
  • 1 hard boiled egg, chopped
  • 1/2 saltine crackers, finely crushed
  • 1/2 low-fat mayonnaise
  • 1/4 teaspoon salt (optional)

Preparation

  • Combine first seven ingredients in food processor until smooth. Remove to bowl and stir in remaining ingredients, mixing well.
  • Shape into a log or pack into a container. Serve with assorted crackers and/or vegetables.
