Lime Saffron Rice

Ingredients

  • 1 cup uncooked Kasmati® Rice
  • 1 3/4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground saffron
  • 1 tablespoon butter, melted
  • 3 tablespoons fresh lime juice
  • 1 tablespoon cilantro, chopped
  • salt and pepper, to taste

Preparation

  • Combine rice, broth, salt and saffron in 2 quart saucepan. Heat to boiling; stir once. Reduce heat; cover and simmer 15 minutes or until liquid is absorbed.
  • Stir in butter, lime juice and cilantro. Season to taste with salt and pepper.
