Last Mango in Milan Chicken & Rice
- 1 cup uncooked Texmati® Brown Rice
- 1/2 teaspoon salt
- 1 teaspoon olive oil
- 3 cups cooked chicken, chopped
- 1 (14.5 oz) can Italian style diced tomatoes with juice drained
- 1 mango, peeled, cored, and cubed
- 1 cup Italian blend cheese, shredded (extra for garnish, if desired)
- 1 teaspoon basil
- 1 teaspoon ground pepper
- Prepare rice according to package directions.
- Combine chicken, tomatoes, mango, cheese, basil, and pepper to rice and stir well. Turn burner to medium high and cook 5 minutes stirring occasionally. Spoon into serving bowl.
