Last Mango in Milan Chicken & Rice

Ingredients

  • 1 cup uncooked Texmati® Brown Rice
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil
  • 3 cups cooked chicken, chopped
  • 1 (14.5 oz) can Italian style diced tomatoes with juice drained
  • 1 mango, peeled, cored, and cubed
  • 1 cup Italian blend cheese, shredded (extra for garnish, if desired)
  • 1 teaspoon basil
  • 1 teaspoon ground pepper

Preparation

  • Prepare rice according to package directions.
  • Combine chicken, tomatoes, mango, cheese, basil, and pepper to rice and stir well. Turn burner to medium high and cook 5 minutes stirring occasionally. Spoon into serving bowl.
