Confetti Couscous

Ingredients

  • 1 1/2 cups uncooked Original Couscous
  • 1 1/2 cups chicken broth
  • 1 teaspoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1 (4oz) jar chopped pimientos, drained
  • 10 ozs frozen peas, thawed
  • 1/2 cup toasted, slivered almonds

Preparation

  • Bring broth, rind, juice, and salt to a boil in a medium saucepan. Stir in couscous.
  • Cover; remove from heat. Let stand 5 minutes. Fluff with a fork. Mix couscous, pimiento, peas, and almonds in large serving bowl.
