One Pot Garlic & Herb Chicken and Rice

posted by RiceSelect on 4/23/2017Comments(0)

Have you ever gotten to the point where you feel like you’ve spoiled your diet by eating too much junk food and need to detox and eat healthy for a bit? Well I am SO there right now. I love being a food blogger and would love to make it my full time job, but the one thing I really dislike is how much weight I’ve gained after making so many delicious treats. It’s a necessary evil in this line of work but I was so happy to partner with RiceSelect recently and use their Texmati Brown Rice to create not only a healthy meal, but a delicious One Pot Garlic and Herb Chicken and Rice.

Mexican Burgers with Adobo Sauce

Where do I even begin with these lip smackingly good Mexican Burgers? They are so incredibly delicious & the sticky, sweet, spicy sauce just takes them OVER the top!

Vegetarian Yellow Curry

I also took this curry up one more notch by serving it with RiceSelect Texmati Brown Rice. It is a very good brown rice. I typically think brown rice leaves something to be desired, but this was really a lovely, hearty rice. As I have become more and more environmentally conscious, buying 'Grown in the USA' products has become much more important to me. I love that Texmati rice is actually produced in Texas, is all-natural and non-GMO, so I feel great about eating it. It also holds its shape really well, and doesn't go all mushy after sitting for 10 minutes like many types of rice. Hooray for non-soggy rice!

Lightened Up Spam & Kimchi Fried Rice

We have a confession. We love Spam. Not the email kind, but the meat in a can. Now hold on and hear us out. There are rules for this love, primarily it must be served with rice. Musubi and fried rice to be specific. Now sadly, both aren’t exactly healthy and with Convention Season around the corner, moderation is key. How can you make this healthier? We’re glad you asked! The answer starts with RiceSelect‘s Texmati® Brown Rice!

Brown Rice Seafood Gumbo

Great tasting meals are made from simple ingredients. Great tasting meals require a lot of work. Great tasting meals don’t have to cost a fortunate. All they take is a little bit of inspiration and some tasty ingredients. This recipe didn’t start off as a gumbo, I just had an idea in my head of the flavors I wanted to create, and in the end the stars aligned to form this. So this isn’t a true gumbo, but I think it’s definitely in the ballpark.

Sesame Salmon Bowls

posted by RiceSelect on 4/13/2017Comments(0)

I’m all up on these build-a-bowl recipes lately, can you tell? You know the drill: leftovers on top of. And this sesame salmon bowl is no different – super simple to throw together, but huuuuge on flavor. The hardest (and most time-consuming thing) is really just waiting for the rice to cook. For the WIN.

Horchata Blondies

Rice is life. The original “ancient grain,” rice in some form has been around since the beginning of recorded history, flourishing in every cuisine across the globe, the very foundation of civilization itself. The word for “rice” in Japanese is the same as the word for “meal,” which succinctly demonstrates just how essential this basic cereal has been for many millennia of cooks and eaters. Boasting well over 40,000 different, wholly unique varieties, one could easily eat rice every single day for their entire lives and never grow bored. Today, I’m talking about basmati, but not just any basmati; Texmati, the first of its kind to be grown in the US.

Creamy Mushroom Rice Soup

Creamy Mushroom Rice Soup is an easy-to-make meal that is perfect for any time of the year. This soup is gluten-free and will be a family favorite. The mushrooms bring an earthy taste to the dish. New Quinoa Products

Quinoa is an ancient grain produced mainly in the Andes region of South America. Its consumption dates back to about 3000BC. Quinoa was referred to by the Incas as “the mother grain”. Quinoa is technically not a grain but a gluten-free seed; it’s used, however, in the same way as other whole grains.

South of the Border Salad Bowl

It was a perfect confluence of events. I was invited to a dedication at a local yacht club, complete with naval officers and Girl Scouts, and asked to bring a side to share. I had just loaded up with fresh corn, heirloom tomatoes, peppers and tomatillos (it’s true, I have been to five farmers market in six days – it’s that time of year – and no, I don’t have a problem, but thanks for your concern)! And then a fabulous box filled with RiceSelect Texmati Rice appeared on my doorstep awaiting a review (two thumbs up), courtesy of culinary friends at Mambo Sprouts. The wheels were already turning. Rice. Grilled Veggies. Salad Bowl. Rice & Grilled Veggie Salad Bowl. Voila! A summer salad jammed packed with flavor was born.

Italian Rice Pie

Although this dessert is often referred to as Italian Easter Pie there is no reason you have to be Italian or even wait until Easter to enjoy a slice. Flavored with citrus and cinnamon, the pie makes a refreshing anytime treat.

Mozzarella Stuffed Arancini

posted by RiceSelect on 7/12/2016Comments(0)

I love cooking all kinds of comfort food and since I'm Italian {on my Dad's side, of course} I have grown up eating hearty Italian meals. I have tried Arancini, or Italian Rice Balls, before but I've never made them myself. I guess at the time they seemed a little intimidating. But when I was sent a few containers of RiceSelect's Texmati Rice to try, I figured I would give the recipe a try. And let me tell y'all....they were super easy to make and tasted even better than the restaurant version!

Mango Bok Choy Fried Rice

posted by RiceSelect on 6/23/2016Comments(0)

I receive a weekly delivery of organic produce. I unpack the box every Friday and lay everything out on the counter. This helps me shape my menu for the upcoming week and often I get inspiration from what is next to each other. In my last delivery I had some beautiful bok choy sitting next to a mango and that’s how this recipe came to be. Fried rice is much like stir fry in that the most time-consuming part is prepping the ingredients but once you start cooking, it comes together quickly. This vegan fried rice dish is quick, easy and most importantly, delicious!

Lemon Basil Risotto

Horchata Ice Cream

Horchata Ice Cream is so refreshing and delicious! Inspired by the Mexican agua fresca, this real food ice cream is rice milk infused with hints of sweet cinnamon. Have you ever had Mexican “fresh waters” a.k.a. aguas frescas before? Aguas frescas are the perfect thirst-quenching drink on a hot summer day. They’re usually full of bold flavors and poured over a glass full of ice. Sweet, icy deliciousness!

Kimchi Rice Cakes with Beef Bulgogi

posted by RiceSelect on 2/05/2016Comments(0)

Turn leftover rice into a completely new dinner with crispy Kimchi Rice Cakes with Beef Bulgogi. Despite the fact that I’ve been cooking for two people (and before that just one person) for over 10 years, there are some dishes that I can’t manage to make without a bunch of leftovers. I’m not counting the meals that I actually want to get leftovers from, such as casseroles and baked pasta dishes but just your average nightly dinner.

Pumpkin Rice Pudding

posted by RiceSelect on 8/21/2015Comments(0)

Rice pudding. Have you ever made it? Have you ever even eaten it? Before last week, rice pudding had never touched my lips. Rice to me was always the unimportant layer under the main dish. Wow, was I missing out. I used Matt’s grandma’s rice pudding recipe to create this unique Pumpkin Pie Rice Pudding where the rice isn’t just a lost-on-the-plate ingredient. No, the rice here, along with your favorite fall flavors, takes center stage.

Butternut Squash Risotto with Bacon, Maple and Sage

posted by RiceSelect on 8/21/2015Comments(0)

Rethink rice by adding seasonal fall flavors to risotto! Butternut squash, bacon, maple and sage perfectly complement the creamy texture of Arborio rice and create a unique and flavorful meal! Butternut squash is my favorite fall flavor. Yes, you read that right. While I love pumpkin, butternut squash is like pumpkin’s long lost cousin that doesn’t get enough credit as it deserves. I love the sweet, nutty flavor, and it is a perfect complement to the creamy texture of Arborio rice. The butternut squash thickens the rice to the perfect consistency, and the other ingredients add exceptional flavor.

Gluten Free Bacon, Egg, and Cheese Corn Risotto

Rice deserves respect… main dish respect. Create an unforgettable meal with this Gluten-Free Bacon, Egg, and Cheese Corn Risotto! People. I’m guilty. Like really guilty. I don’t know why I neglect rice the way I do. It’s delicious… and way under-utilized in my kitchen. Kinda like me spending so much time on the bench for my basketball team when I was a kid. Way under-utilized.
