Sesame Salmon Bowls

I’m all up on these build-a-bowl recipes lately, can you tell? You know the drill: leftovers on top of. And this sesame salmon bowl is no different – super simple to throw together, but huuuuge on flavor. The hardest (and most time-consuming thing) is really just waiting for the rice to cook. For the WIN.

Horchata Blondies

Rice is life. The original “ancient grain,” rice in some form has been around since the beginning of recorded history, flourishing in every cuisine across the globe, the very foundation of civilization itself. The word for “rice” in Japanese is the same as the word for “meal,” which succinctly demonstrates just how essential this basic cereal has been for many millennia of cooks and eaters. Boasting well over 40,000 different, wholly unique varieties, one could easily eat rice every single day for their entire lives and never grow bored. Today, I’m talking about basmati, but not just any basmati; Texmati, the first of its kind to be grown in the US.

Creamy Mushroom Rice Soup is an easy-to-make meal that is perfect for any time of the year. This soup is gluten-free and will be a family favorite. The mushrooms bring an earthy taste to the dish. South of the Border Salad Bowl

It was a perfect confluence of events. I was invited to a dedication at a local yacht club, complete with naval officers and Girl Scouts, and asked to bring a side to share. I had just loaded up with fresh corn, heirloom tomatoes, peppers and tomatillos (it’s true, I have been to five farmers market in six days – it’s that time of year – and no, I don’t have a problem, but thanks for your concern)! And then a fabulous box filled with RiceSelect Texmati Rice appeared on my doorstep awaiting a review (two thumbs up), courtesy of culinary friends at Mambo Sprouts. The wheels were already turning. Rice. Grilled Veggies. Salad Bowl. Rice & Grilled Veggie Salad Bowl. Voila! A summer salad jammed packed with flavor was born.

Although this dessert is often referred to as Italian Easter Pie there is no reason you have to be Italian or even wait until Easter to enjoy a slice. Flavored with citrus and cinnamon, the pie makes a refreshing anytime treat.

Mozzarella Stuffed Arancini

I love cooking all kinds of comfort food and since I’m Italian {on my Dad’s side, of course} I have grown up eating hearty Italian meals. I have tried Arancini, or Italian Rice Balls, before but I’ve never made them myself. I guess at the time they seemed a little intimidating. But when I was sent a few containers of RiceSelect’s Texmati Rice to try, I figured I would give the recipe a try. And let me tell y’all….they were super easy to make and tasted even better than the restaurant version!

Mango Bok Choy Fried Rice

I receive a weekly delivery of organic produce. I unpack the box every Friday and lay everything out on the counter. This helps me shape my menu for the upcoming week and often I get inspiration from what is next to each other. In my last delivery I had some beautiful bok choy sitting next to a mango and that’s how this recipe came to be. Fried rice is much like stir fry in that the most time-consuming part is prepping the ingredients but once you start cooking, it comes together quickly. This vegan fried rice dish is quick, easy and most importantly, delicious!
