Apple & Brown Rice Salad

Ingredients

  • 3 cups cooked Texmati® Brown Rice
  • 3/4 cup (6 oz) low fat orange yogurt
  • 1/2 cup reduced fat mayonnaise
  • 2 medium apples, diced
  • 1 cup celery, chopped
  • 3/4 cup pecans, toasted, coarsely chopped
  • 3/4 cup dried cranberries

Preparation

  • Combine yogurt and mayonnaise in large mixing bowl.
  • Add remaining ingredients, mixing well.
  • Serve immediately or chill before serving.
